MY “WEIGHT LOSS” TIRAMISU
Spiced cookie layer: 1 cup fine almond flour, 3 tbsp melted butter, 2 tbsp monk fruit sweetener, 1 egg yolk, 1 tsp cinnamon, ¼ tsp ginger, pinch of nutmeg, pinch of salt, ½ tsp vanilla. Press thin, bake at 325°F for 12–15 min, cut into fingers, crisp 5 more min.
Protein cream: 1 cup full-fat cottage cheese blended smooth with 1 scoop vanilla whey, then stirred with 1½ cups Greek yogurt, 3 tbsp allulose, ½ tsp vanilla, pinch of salt.
Espresso dip: 2 tsp instant espresso powder in ½ cup hot water, 1 tbsp allulose, ¼ tsp rum extract. Cool completely.
Dip cookies 1–2 seconds per side, layer with cream in an 8×8, chill at least 4 hours (overnight is better), dust with cocoa before serving.
THE VIRAL VERSION
3 cups whole-milk Greek yogurt stirred glossy right in the tub, 10 Biscoff cookies dipped in cooled espresso, layered, chilled overnight, cocoa on top. That’s the whole recipe — no sugar, no bowl, no oven.
